Domestic Cheese of the Week: Acapella

Acapella refers to singing without accompaniment and is also the name of a goat cheese with a flavor so delicate and divine, it is best enjoyed solo. Made by Andante Dairy, Acapella is sold in two shapes, round or pyramid. The round, sold with and without an ash rind, is soft and often fluffy. The pyramid is aged and has a drier texture. The flavor is sweet and milky, with a hint of spiciness the closer you get to the rind.
