Cheese of the Week: Humble Pie

How could anyone resist such a gooey, decadent-looking cheese with such a great name? Humble Pie is made by Woodcock Farm in Vermont. Made from pasteurized sheep and cows' milk, the flavor starts out buttery but finishes with a little attitude - I wouldn't say pungent, but it does have that savory flavor referred to as "beefy."  If you close your eyes when you take a bite of Humble Pie, your mind will start wandering to things like slow-cooked pot roast with onions...

Humble Pie is for you East coasters, as I haven't seen it sold anywhere else. However,if you're curious about Woodcock Farm, you can buy a sampler of Woodcock Farm cheeses online from Artisan-Made (although Humble Pie is not included.)
