Cotija Cheese, Corn and Wild Rice Salad

This salad came into being on one of those "what am I going to make for dinner nights". The original salad was simply canned black beans, frozen corn, and a hearty crumble of Cotija cheese. I still love that simple salad, but over time it has evolved into a more refined dish, one that pairs well with grilled chicken or pork.

The recipe for Cotija Cheese, Corn and Wild Rice Salad calls for only 1/2 tsp of red pepper flakes, but you can spice it up more if you like. The creamy Cotija cheese will cool down the spiciness in each bite and keep you coming back for more.
