I love the combination of chilled beets and goat cheese. Add avocado, and I'm in heaven. Goat Cheese and Beet Salad with Avocado Dressing can be served in three different ways. To be honest, the third option is the one I use most and if I'm really busy, I don't even bother with the avocado dressing. I just chop up some avocado, add a little olive oil and sea salt and voila! Pure heaven.
