Sometimes, with all the cheese available, its easy to forget about Cantal. This cows' milk cheese from France is not flashy, nor is it a new. When Julius Caesar strolled into France around 58 BC, it was already in existence, and since then the recipe has changed very little.

Cantal is not exceptionally strong-flavored nor beautiful looking, but it's mighty tasty: mild, nutty, and the perfect snacking cheese. Keep an eye open for it next time you're at the cheese shop.
