Domestic Cheese of the Week: Silver Mountain

Silver Mountain is a raw-milk cheese most people immediately assume is Cheddar. It looks like Cheddar, tastes similar to Cheddar and is made by Bravo Farms, a cheese making operation known for their Cheddar. The recipe for this cows' milk cheese, though, is actually a cross between Manchego and Cantal.

Silver Mountain is aged more than nine months and is mild, with nutty and grassy nuances of flavor. It's a great cheese to take on Spring picnics and eat with fresh fruit and salami.
