Happy Cinco de Mayo! If you're celebrating at home tonight, don't forget the cheese! Cotija is a great one to crumble into any salad, especially a Wild Rice Salad with Corn.

Asadero is another great cooking cheese, and melts better than Cotija does. The flavor is somewhat similar to Monterey Jack. Use Asadero in dishes like Chile Rellenos or quesadillas.
