Fromage Fort Recipe

Hate to waste leftover cheese? This is a traditional French way to use up all those bits and ends.

Serves 4-6

Prep Time: 10 minutes

Ingredients:

  • 1 pound cubed or grated leftover cheese at room temperature (4 cups)
  • 1/4 cup white wine
  • 1-2 peeled garlic cloves
  • 1/2 Tbsp finely chopped fresh herbs of your choice (optional)

Preparation:

Place garlic cloves in food processor, and whir until garlic is roughly chopped. Add cheese and wine. Add fresh herbs, if you choose to use them. My favorites are parsley, thyme or chives. Whir garlic, cheese, wine and herbs in food processor until smooth and creamy, about 30 seconds. Serve immediately, or refrigerate up to one week.
