Polenta with Cheddar and Bacon Recipe

Polenta with Cheddar and Bacon

Almost any cheddar cheese will do with this recipe. I like to serve it with one that is slightly sharp, to add extra flavor.
Prep Time: 10 minutes
Cook Time: 7 minutes
Ingredients:
  • 6 pieces of bacon
  • One 18 oz. tube cooked polenta
  • 1 large tomato
  • 1/2 cup grated cheddar cheese
  • Parsley to garnish
Preparation:

In a microwave or in a pan on the stove, cook bacon until crispy. Let bacon cool, then crumble into small pieces.

Dice the tomato into small pieces.

Slice the tube of polenta into 12 round slices. Drizzle olive oil in a pan over medium heat. When the pan is hot, add the slices of polenta. Cook 2-3 minutes on each side.

Place polenta on a serving plate. On each round of polenta, pile pieces of tomato, bacon and cheddar. Garnish with a sprig of parsley. Serve at room temperature.
