Pairing salty blue cheese with anything sweet creates a perfect balance of flavor. Blue cheese and figs look gorgeous on a plate and can be served as an appetizer or dessert. Serve with toasted slices of bread drizzled with olive oil.

Any type of blue cheese will work - Gorgonzola, St. Agur, Cashel Blue,Maytag Blue and Great Hill Blue are some look for.

Serves 3-6 as an appetizer or dessert

Cook Time: 6 minutes
Ingredients:
  • 8 ripe figs
  • 1 tsp olive oil
  • 1/3-1/2 lb. blue cheese
  • Several sprigs of fresh thyme
Preparation:

Cut figs in half lengthwise

Drizzle olive oil over figs, lightly coating both sides

On a grill over medium heat, cook figs 2-3 minutes on each side

Put the wedge of blue cheese on a plate and arranged grilled figs around it. Sprinkle fresh thyme leaves on top of the figs and garnish the plate with remaining sprigs of thyme. Let guests serve themselves, spreading blue cheese on a slice of bread and topping it with a fig
