Pairing salty blue cheese with anything sweet creates a perfect balance of flavor. Blue cheese and figs look gorgeous on a plate and can be served as an appetizer or dessert. Serve with toasted slices of bread drizzled with olive oil.
Any type of blue cheese will work - Gorgonzola, St. Agur, Cashel Blue,Maytag Blue and Great Hill Blue are some look for.
Serves 3-6 as an appetizer or dessert
- 8 ripe figs
- 1 tsp olive oil
- 1/3-1/2 lb. blue cheese
- Several sprigs of fresh thyme
Cut figs in half lengthwise
Drizzle olive oil over figs, lightly coating both sidesOn a grill over medium heat, cook figs 2-3 minutes on each side
