Goat Cheese with Peach Jam

The sweetness of a fruit jam is an especially good pairing with tangy, creamy goat cheese. Instead of using peach jam, you can also substitute apricot or fig. A goat cheese that works especially well for this recipe is Coach Farm's Medallion.

Don't prepare this appetizer too far ahead, or the goat cheese might cause the crackers to get slightly soggy. If you don't have time to wait until the last minute, then simply scoop the jam on top of the goat cheese round, and serve with a knife and crackers on the side.

Ingredients:

  • 4 oz. fresh goat cheese
  • 1/3 cup peach jam
  • 10-12 crackers, such as Star Ridge Olive Oil, Scottish Oat Biscuits or Carr's Whole Wheat Crackers
  • 2 Tbsp. finely chopped pecans

Preparation:

Cut wedges of goat cheese from a medallion of goat cheese or thin rounds from a goat cheese log. The slices should be thin enough so you can get at least ten servings of cheese from 4 oz.

Place each wedge of cheese on a cracker. Put a dollop of peach jam on top of the cheese. Lightly sprinkle chopped pecans on top.
