Recipe for Manchego and Olives Appetizer

This Manchego and Olives recipe combines two things often served side by side, Spanish cheese and olives, into one dish. Don't hesitate to experiment with other Spanish cheeses, such as Campo de Montalban, Zamarano, or Mahon. You don't have to only use Spanish olives, like Manzanilla and Arbequina, for this recipe. Mixed Greek olives, French Luque olives and Italian Cerignolas will taste just as great.

This Manchego and Olives recipes serves four as an appetizer.

Prep Time: 10 minutes
Ingredients:
  • .5 lb Manchego cheese
  • 2 cups mixed olives, preferably pitted
  • 1 tsp. olive oil
  • 1/2 - 1 tsp. red pepper flakes, depending on how spicy you want the appetizer to be
Preparation:

Cut the rind off the cheese then cut the cheese into small cubes.

Mix olives, cheese, olive oil and red pepper flakes in a serving dish and serve with toothpicks.
