Recipe for Goat Cheese With Mango Salsa

If you're tired of serving regular chips and salsa as an appetizer, try this Goat Cheese With Mango Salsa recipe, served with blue corn chips. The sweet/spicy salsa pairs well with the fresh, tangy goat cheese.

Prep Time: 20 minutes

Ingredients:

  • 1 coarsely chopped ripe Mango
  • 1/4 cup finely chopped red onion
  • 1 finely chopped garlic clove
  • 1 finely chopped red pepper
  • 2 Tbsp coarsely chopped cilantro
  • 1/2 tsp red pepper flakes (use only 1/4 tsp if you want a less spicy salsa)
  • 3 tsp rice wine vinegar
  • Serve Salsa With:
  • 4-8 oz log of fresh goat cheese
  • Blue Corn Chips

Preparation:

Combine all salsa ingredients in a bowl. Ideally, refrigerate 1-2 hours before serving so the flavors have time to blend.

Serve salsa on a plate with the fresh goat cheese and a bowl of blue corn chips
