Ingredients:
- 1 coarsely chopped ripe Mango
- 1/4 cup finely chopped red onion
- 1 finely chopped garlic clove
- 1 finely chopped red pepper
- 2 Tbsp coarsely chopped cilantro
- 1/2 tsp red pepper flakes (use only 1/4 tsp if you want a less spicy salsa)
- 3 tsp rice wine vinegar
- Serve Salsa With:
- 4-8 oz log of fresh goat cheese
- Blue Corn Chips
Preparation:
Combine all salsa ingredients in a bowl. Ideally, refrigerate 1-2 hours before serving so the flavors have time to blend.Serve salsa on a plate with the fresh goat cheese and a bowl of blue corn chips
