Crispy, salty parmesan crisps can be eaten alone, used as a garnish, or crumbled over salads, pasta, and other dishes. For breakfast, try Poached Eggs with Parmesan Crisps

Yield: 8 crisps


  • 1/3 lb (about 1 cup) Parmesan cheese, finely grated. Use the smallest holes on a box grater.
  • 1/8 tsp cayenne pepper or black pepper - optional. This will make the crisps quite spicy.


Preheat oven to 325

Mix together the grated cheese and pepper.

Line a cookie sheet with either parchment paper or a nonstick silicone baking pad. Using a Tablespoon measurement, drop even mounds of parmesan cheese on the baking sheet. Use your fingers to pat the cheese into a thin circle about 3 inches across in size. Make sure none of the circles are touching.

Bake five minutes, or until golden and crisp. When the crisps are still warm, you can fold them around the handle of a wooden spoon to give them some shape, or just leave the crisps as flat rounds.

I am not a cook and do not enjoy it. But I love these crisps. Had them on a salad in a restaurant and was surprised to see how easy they were to make. Now, because I do not cook much I had no parchment paper around. I sprayed some Baker's Joy on a cookie sheet instead and it worked just fine -- my oven took slightly longer to cook them, maybe about 7-10 minutes. Could this be because I used a spray instead of paper? Thank you for this great recipe -- it made tonight's salad as fancy as any restaurant chef could make!
