Goat Cheese and Zucchini Latkes Recipe

Similar to potato latkes, these zucchini latkes become more flavorful with the addition of goat cheese. If you don't like goat cheese, try using feta or mozzarella instead. The zucchini latkes can be served alone or with sour cream.

Goat Cheese and Zucchini Latkesrecipe makes 15-18 cakes

Prep Time: 15 minutes

Cook Time: 20 minutes

Ingredients:

  • 3 cups grated zucchini (about 3 medium-sized zucchini)
  • 1/2 tsp salt
  • 1 egg
  • 1 egg yolk
  • 1/2 cup flour
  • 1/4 cup chopped Italian parsley
  • 1/2 cup crumbled goat cheese (about 3 oz)
  • 1/2 cup vegetable oil

Preparation:

Grate zucchini into a bowl. Add salt, stir, and let sit five minutes.

Wrap zucchini in a dish towel and wring out excess liquid from the zucchini. Return the grated zucchini to a bowl.

Add egg and egg yolk and whisk with a fork.

Add flour and continue to mix with a fork.

Add parsley and cheese.

Pour oil into a saute pan and warm on medium heat for 1 minute. Using a Tablespoon measurement, drop zucchini into the oil to form small cakes. Press the cakes down slightly with a fork and cook them four minutes on each side, until golden brown.

Transfer to a plate. Serve warm or at room temperature.
