Mozzarella is a soft, creamy stretched curd cheese that originates from Italy, although most mozzarella sold in the US is made domestically. Mozzarella sold in the US is made from pasteurized cows' milk, unless it is called mozzarella di bufala, which is rare and made from the milk of water buffalo.
Fresh mozzarella is sold in water and is creamier than mozzarella sold in plastic packaging. I prefer fresh mozzarella, although I occasionally use regular mozzarella if I'm melting it for lasagna or pizza.
