The cottage cheese in these muffins is a secret ingredient. It simply gives the muffins a moist, dense texture. These muffins aren't overly sweet and have just the right amount of cinnamon; noticeable but not overpowering.

For more flavor, fruit (like blueberries) can be added to the muffin batter and a streusel topping can be sprinkled on top.

Ingredients

  • 1 3/4 cups all-purpose flour

  • 1 tablespoon baking powder

  • 1 1/2 teaspoons ground cinnamon

  • 1/4 teaspoon salt

  • 1/2 cup (4 ounces) unsalted butter, melted, or vegetable oil

  • 1 teaspoon pure vanilla extract

  • 2/3 cup sugar

  • 2/3 cup cottage cheese

  • 2/3 cup milk

  • 1 large egg, whisked

Steps to Make It

  1. Gather the ingredients.

  2. Preheat oven to 400 F

  3. Spray or brush a muffin tin with oil.

  4. In a small bowl whisk together flour, baking powder, cinnamon, and salt.

  5. In a large bowl whisk together butter or oil, vanilla, sugar, cottage cheese, and milk.

  6. Whisk in the egg.

  7. Gently fold in the flour mixture, stirring gently until completely combined. The batter will be very thick.

  8. Evenly fill all 12 spaces in the muffin tin.

  9. Bake for 15 to 17 minutes or until tops are golden.

  10. Let the muffins cool in the muffin tin for 10 minutes before taking out of the tin.

  11. Serve and enjoy!

Recipe Variations

  • Add 1 cup fruit (blueberries, raspberries, chopped strawberries)
  • Add a cinnamon streusel topping

Tips

These cottage cheese cinnamon muffins taste best warm, the day they are made.

Tips for Making Great Muffins

  • Take eggs, butter, and milk out of the fridge early enough to come to room temperature
  • Use a large rubber spatula to gently fold the dry mixture into the wet mixture, using as few strokes as possible
  • Fill muffin tins about 3/4 full
  • Bake muffins at a higher temperature (400 F) so they bake evenly, stay moist in the middle, and rise with nicely formed muffin tops.

Why Add Cottage Cheese?

When used as an ingredient, cottage cheese melts and disappears completely, making it a secret ingredient. Cottage cheese gives dishes like pasta a creamy, rich texture and baked goods like cake and muffins a moist, dense texture. It also adds a little more protein and calcium to food.

How Is Cottage Cheese Made?

Cottage cheese is made by adding rennet or cultures to milk to thicken it. Cultured cottage cheese is also called "clabbered" cottage cheese and tends to have a tangy flavor.

Once curds form they are cut, rinsed with water and then mixed with salt and cream (or milk).

Many brands of cottage cheese sold in grocery stores contain gums or carrageenan to stabilize and thicken it. Homemade cottage cheese and artisanal cottage cheese made by cheesemakers do not contain gums or carrageenan.
