Answer:

Cold temperatures mute flavor and texture. A cheese just out of the refrigerator will not give off as much aroma and flavor as a cheese that is brought up to room temperature. The texture, especially for soft cheeses, is more supple if the cheese is at room temperature.

To bring cheese up to room temperature, remove it from refrigeration a half-hour before serving.
