Topics:
The shortcourse covers all steps of the cheesemaking process, including acidity testing and measurements, cheese cultures and enzymes, and sanitation. There is also hands-on cheesemaking activities and field trips to licensed cheesemaking facilities.
About Washington State University:
Washington State University has had a creamery on campus for decades.
In the 1940's, the US government and American Can Company funded WSU's research to find a way to successfully package cheese in a tin. The cheese the creamery was making was called "Cougar Gold" and it is still produced by the University and packed in its trademark tin.
Through the 1970's, the creamery provided milk for students. Now the creamery sells cheese and ice cream to the public. The revenue supports the creamery and research facility used by students earning Food Science degrees.
