Origin:

Spain, Castile-Leon region

Rind:

Typically colored dark green, the rind is similar to the inedible, zigzag patterend rind of Manchego.

Flavor:

Aged at least three months, the cheese develops a nutty flavor with a salty backdrop.

Uses and Pairings:

Serve with olives and the dried Spanish sausage, chorizo. Pinot Noir, Albarino, or red Spanish wines pair well.
