Wrappings of green leaves and aromas and flavors of fresh herbs, plants and flowers . . . these are cheeses meant for Spring.

Pair this cheese plate with a newly-released vintage of Rosé or an aromatic Sauvignon Blanc.

  • St. Pat - Cowgirl Creamery
    This cheese is only sold in the Spring. Made from organic cows' milk and aged three weeks, the cheese is creamy and mild flavored. What makes it especially spring-like is a wrapping of spring nettles that impart a very subtle earthy and grassy flavor.
  • Saint Nectaire - France
    Wheels of this Camembert-like cheese imported into the U.S. are pasteurized and mild, but the aroma – subtle but unmistakably like asparagus – is what makes me think of spring.
  • Hoja Santa - Mozzarella Co.
    If you can find this cheese, it’s a real treat. Made in Texas and sold in a select number of store across the U.S., this goat cheese is wrapped in green Hoja Santa leaves. The leaves have an herbal flavor with a hint of maple.
  • Brin d’Amour/Fleur du Maquis - Corsica
    This sheeps’ milk cheese is scented by a rind of herbs and flowers from Mediterranean hillsides.
