I make this easy Feta Flatbread recipe when I want to serve something more interesting than a baguette. Feta Flatbread is flavorful enough to stand alone, or you can serve it with a cheese plate or dip.

Stores often sell containers of crumbled Feta, or you can buy a block of Feta and crumble it yourself.

This Feta Flabread recipe serves four people.

Prep Time: 20 minutes

Cook Time: 12 minutes

Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp. salt
  • 2 Tbsp. fresh thyme
  • 2 Tbsp. chopped fresh sage
  • 1/2 cup water
  • 1/3 cup + 2 Tbsp olive oil
  • 1/2 cup crumbled feta

Preparation:

Preheat oven to 425

In a large bowl, stir together flour, baking powder, salt and herbs with a wooden spoon or rubber spatula. Make a well in the middle of the bowl and pour water and 1/3 cup olive oil into it. Stir slowly until it forms into dough, then use your hands to knead the dough lightly and incorporate all the flour.

Split the dough into two balls. On a cookie sheet or pizza stone, roll out one ball as thin as possible. The thinner the dough, the crispier the flatbread will be. Brush the dough with 1 Tbsp of olive oil and put in the oven.

Bake 8 minutes, then sprinkle 1/2 cup Feta on the dough. Cook 3-5 minutes longer, until flatbread is lightly browned. Remove from oven and let cool.

Repeat same process with second ball of dough. Then break the cooled Feta Flatbread into pieces and serve.
