- Great Hill Blue - Made with raw, unhomogenized milk, this blue is as rich as it gets. The dense, creamy texture is slightly crumbly. The flavor is full, tangy and sweet with a slight spiciness.
Cheesemakers:
Tim Stone was an engineer before he returned to his family farm, Great Hill Dairy. In 1996 he and his wife, Tina, began making cheese. They decided on blue cheese after discovering there was currently no raw, unhomogenized blue cheese being made in the United States.
