Cow. Brie imported into the United States is pasteurized. In France, Brie is traditionally made with raw milk.

Flavor:
French Brie sold in the United States is factory-made and typically lacks bold flavor. This does not detract many fans, however, as people love its mild, milky flavor and creamy texture.
Uses and Pairings:

Because Brie is made near the Champagne region, many people like to pair the cheese with Champagne and other sparkling wines. A mild Brie also pairs well with Cabernet Sauvignon.

Recipes such as Brie with Pesto and Brie with Mushrooms add a flavorful topping to Brie.
