Flavor:

As washed-rind cheeses go, Reblochon is on the mild side. The texture is creamy and springy. The flavor is nutty and sometimes meaty.

Uses and Pairing:

Reblochon goes well with fruity red wines, like Beaujolais, or a fruit driven Pinot Noir from California. It can also pair well with Riesling.
