Vacherin Mont d'Or

Cow. In Europe,Vacherin Mont d'Or (sometimes called Vacherin du Haut Doubs) is made with raw milk. In the United States, it is only available pasteurized.

Origin:

France, Franche-Comté region

Flavor:

Mild, yeasty and woodsy

Uses and Pairings:

This cheese is so soft it's runny. Slice the top rind off and scoop the cheese out with a spoon or chunk of bread. Pair with Champagne or a dry Riesling.
