Cantal had a natural rind

Definition: A cheese rind that forms naturally when the outside of the cheese hardens from contact with air during the cheesemaking process.

Most natural rinds are edible, however, the flavor of the rind rarely enhances the cheese and the texture is often gritty, so it's best to avoid eating it.
