Quinoa makes a wonderful baked casserole and is a healthy alternative to rice. This recipes for Baked Quinoa with Sausage and Cheese can be served for dinner or breakfast and is good warm and at room temperature.

Breakfast sausage or Italian sausage are both good choices, but any type of sausage you prefer can be used. Grate any type of hard cheese you like into this baked quinoa recipe. Some to try are cheddar, gruyere, manchego or leerdammer.

Prep Time: 20 minutes

Cook Time: 25 minutes

Total Time: 45 minutes

Yield: 4-6 Servings

Ingredients:

  • 1 cup uncooked quinoa
  • 1 small onion, finely chopped
  • 1 cup uncooked sausage (about 2 whole sausages or 2/3 pound bulk)
  • 2 eggs
  • 1/2 teaspoon kosher salt
  • 2 1/2 - 3 cups grated cheese

Preparation:

Preheat the oven to 400 degrees and grease a 2-quart baking dish.

Bring 3 cups of water to a boil. Add quinoa and simmer with a lid for 15-20 minutes. The liquid should be absorbed and the quinoa will be soft but chewy. Each grain will look like it has popped open.

While the quinoa is boiling, saute the onion in a few tablespoons of olive oil. Add sausage and saute until the meat is cooked, but still just slightly pink.

Whisk the eggs with the salt.

Mix together the quinoa, onion, sausage, eggs and 2 cups of cheese. Spread evenly into the baking dish

Top with 1/2 - 1 cup of grated cheese.

Bake uncovered for 25 minutes.

The dish can be served immediately, but if you want to cut it into squares that hold together you will need to let it cool first.

I made this tonight for dinner and my kids loved it! I followed the Quinoa box directions and used only 2 cups of water rather than 3. I used mozzarella cheese and threw in a bunch of fresh spinach. Super easy for a non-cook like me. Next time I'm going to add sundried tomatoes and maybe some mushrooms. So good!
