Ingredients:
- 1 cup uncooked quinoa
- 1/2 teaspoon salt
- 2 eggs
- 2-3 cups grated mozzarella cheese
- 1/2 cup full-fat Greek yogurt
Preparation:
Preheat the oven to 400 degrees and oil a 2-quart (8x8)square baking dish.
Bring 2 1/2 cups of water to a boil. Add quinoa and simmer with a lid for 15-20 minutes. The liquid should be absorbed and the quinoa will be soft but chewy. Each grain will look like it has popped open.
Whisk the eggs with the salt.
Mix together the cooked quinoa, eggs, cheese and yogurt.
Spread the mixture evenly in the baking dish. Bake uncovered for 25 minutes.
Cooking with Quinoa
