Creamy Baked Quinoa with Mozzarella

I make this baked quinoa dish for my young daughter, who loves the mild, cheesy flavor. Adults might like some bolder flavors thrown in, in which case you can use this recipe as a base and add other ingredients. This versatile recipe can be served for dinner as a side dish but I especially like it as a quick and healthy breakfast the next morning.

If you'd like to experiment with more flavor, then once the ingredients in this recipe are mixed together, you can also consider adding:

  • 4-6 pieces of prosciutto or ham, thinly sliced
  • 1 cup chopped green onion
  • 1 cup kalamata olives and some fresh basil
  • 1 cup of halved artichoke hearts
  • 1/2 cup of basil pesto
  • 1 cup of small broccoli florets
  • Prep Time: 30 minutes

    Cook Time: 25 minutes

    Total Time: 55 minutes

    Yield: 6 servings

    Ingredients:

    • 1 cup uncooked quinoa
    • 1/2 teaspoon salt
    • 2 eggs
    • 2-3 cups grated mozzarella cheese
    • 1/2 cup full-fat Greek yogurt

    Preparation:

    Preheat the oven to 400 degrees and oil a 2-quart (8x8)square baking dish.

    Bring 2 1/2 cups of water to a boil. Add quinoa and simmer with a lid for 15-20 minutes. The liquid should be absorbed and the quinoa will be soft but chewy. Each grain will look like it has popped open.

    Whisk the eggs with the salt.

    Mix together the cooked quinoa, eggs, cheese and yogurt.

    Spread the mixture evenly in the baking dish. Bake uncovered for 25 minutes.

    Cooking with Quinoa

    Quinoa is a grain that cooks quickly and has a mild earthy, nutty flavor. Because the flavor is so mild you can add just about anything to quinoa. Quinoa is often served as a cold salad, with different types of raw or cooked vegetables mixed in. Some people also like to mix cooked quinoa with milk, almond milk or soy milk and nuts or dried fruit, so it becomes more of a breakfast cereal. Another way to enjoy quinoa is to bake quinoa with eggs and cheese (to hold it together.) It turns into a delicious and healthy casserole. Quinoa has more protein than any other grain and contains all eight essential amino acids, which makes it a complete protein.
