Origin:

Mediterranean island of Menorca

Rind:

Natural, thin, orange-colored rind

Flavor:

Salty, tangy and grassy - a flavor that evokes the Mediterranean hillsides and salty sea-kissed air. The flavor of Mahon gets stronger as the cheese ages. Many cheese stores sell both a young and aged version.

Uses and Pairings:

Pair with chorizo and beer or take things in an entirely different direction and try pairing Mahon with a sweet sherry, dried fruit and nuts.
