The Reuben is a sandwich that will fill you up for the entire day. It's an indulgence that should not be resisted. Generic, pre-sliced Swiss cheese is plenty satisfying for this Reuben Sandwich recipe, but you can go a little more gourmet by using Gruyere or Appenzeller.

Reuben Sandwich Recipe makes four large sandwiches

Prep Time: 15 minutes

Cook Time: 15 minutes

Ingredients:

  • 8 slices rye or sourdough bread
  • 12 thin slices of Swiss cheese
  • 1/2 lb. thinly sliced corned beef
  • 16 oz jar of sauerkraut

Preparation:

Preheat oven to 375

Liberally butter one side of each slice of bread. On the unbuttered side of four slices of bread, equally layer cheese and corned beef. Add 1/4 cup or more of sauerkraut to each sandwich. Add the top slice of bread.

On a cookie sheet, bake sandwiches until the bread is slightly browned and the cheese is completely melted.

Serve with a side of Thousand Island dressing.
