This Mozzarella Asparagus Pizza recipe uses black olive tapenade or pesto (or both!) as a sauce. Using fresh mozzarella keeps the pizza from getting too "cheesy" and greasy. You can make your own pizza dough, or buy it already made. Ditto for the tapenade and pesto.

Mozzarella Asparagus Pizza Recipe serves four

Prep Time: 20 minutes
Cook Time: 25 minutes
Ingredients:
  • pizza crust
  • 12-15 asparagus spears
  • 1 large mozzarella ball, thinly sliced
  • 1-2 tomatoes, thinly sliced
  • 1 cup tapenade or pesto, or both
Preparation:

Preheat oven to 375

Blanch asparagus in boiling water for 3 minutes. Cut each spear into three pieces.

Roll out pizza crust. Spread olive tapenade and/or pesto on the crust. Cover evenly with tomato, asparagus and mozzarella.

Bake for 20-30 minutes, depending on the thickness of the crust
