My favorite blue cheese to use in this Blue Cheese Chicken Recipe is Gorgonzola. Because blue cheese is salty, there is no need to add additional salt to this recipe.
The creamy, blue cheese sauce is delicious served over pasta. I also like to serve Blue Cheese Chicken with a side of sauteed greens, like spinach or swiss chard.
This Blue Cheese Chicken Recipe serve four people.
- 2 chicken breasts (at least 1/2 lb. each)
- 1 Tbsp olive oil
- 1/3 cup white wine
- 2/3 cup crumbled blue cheese (about 4 oz)
- 3/4 cup heavy cream
- 1 Tbsp finely chopped Italian parsley
Preheat oven to 375
Slice each chicken breast lengthwise through the middle, creating two thin chicken breasts from the original breast.
In an ovenproof saucepan, heat olive oil over medium heat. Sear the chicken, cooking three minutes on each side. Add the wine and turn the heat to low, simmering for 8-10 minutes until wine has reduced by half. Add cheese, cream and parsley. Simmer another minute then put the pan in the oven for 10-15 minutes. Sauce will continue to reduce and become thicker.
