If you love thin crust pizza, this recipe for you. Flatbread, also known as Lavash, can be found in most grocery stores. It is usually sold in packages than contain a dozen or so rectangular flatbread pieces. This recipe is for two flatbreads.

This is a simple pizza, with no sauce and only three toppings. Other toppings that can be added include sauteed mushrooms, salami or pepperoni and sliced artichoke hearts.

Flatbread pizza recipe serves 2-3 people

Prep Time: 15 minutes

Cook Time: 15 minutes

Ingredients:

  • 2 large Lavash (flatbread)
  • 2 tsp olive oil
  • 1/2 cup sliced sundried tomatoes in olive oil
  • 1/2 cup pitted Kalamata olives, roughly chopped
  • 4 oz. crumbled goat cheese or Feta

Preparation:

Preheat oven to 400

Place flatbread on a cookie sheet. Drizzle 1 tsp of olive oil over each flatbread. Using your fingers smear the olive oil evenly over the bread.

Drain oil from sundried tomatoes. Evenly distribute half of the tomatoes over each pizza and do the same with the olives and cheese.

Bake for 10-12 minutes, until flatbread begins to get crispy. Keep on eye on the pizzas as they bake because flatbread will brown quickly.
