Mediterranean Nachos

Mediterranean Nachos were inspired by a dish a friend described to me with similar ingredients. They are a welcome variation from traditional nachos, which tend to be too heavy and greasy for me.

If you're in a rush, you can buy pita chips already made, but I encourage you to make them yourself as they taste much better.

Mediterranean Nachos Recipe serves four

Prep Time: 20 minutes

Cook Time: 35 minutes

Ingredients:

  • 4 pieces of pita bread
  • 1 lb. ground lamb
  • 1/2 cup roughly chopped onion
  • 1 finely chopped garlic clove
  • 1/2 tsp salt, or more to taste
  • 1 Tbsp dried oregano
  • 2 Tbsp fresh thyme, or 1 tsp dried
  • 1/8 tsp cinnamon
  • 15oz. can garbanzo beans, drained and rinsed
  • 1/4 cup pinenuts
  • 1 cucumber, chopped
  • 2 tomatoes, chopped
  • FOR YOGURT SAUCE:
  • 1 cup greek yogurt
  • 2 Tbsp roughly chopped fresh mint
  • 1/4 lb. Feta
  • 1/4 tsp sea salt

Preparation:

Preheat oven to 375

Slice each pita bread into 8 triangles. Drizzle liberally with olive oil and sprinkle lightly with salt. Put on a cookie sheet and bake until pita chips are lightly browned and crispy, about 20 minutes. Turn the chips a few times while baking to make sure they brown evenly.

Over medium heat, saute lamb with onion, garlic, salt, herbs and cinnamon. When meat is almost cooked through add garbanzos and pinenuts. Cook one minute more then turn off heat and cover the pan with a lid.

In a small bowl, mix yogurt with fresh mint, 2 Tbsp crumbled Feta and sea salt.

Put pita chips on a serving platter. Cover with lamb. Garnish with chopped cucumber and tomato. Crumble remaining Feta over the top. Serve nachos with a side of yogurt sauce.
