Ingredients:
- 4 eggs
- 1/2 tsp cider vinegar
- 8 Parmesan Crisps (see below)
- 1/4 cup finely grated Parmesan cheese
- 1 Tbsp finely chopped fresh herbs. Try chives, tarragon or parsley
- Salt and Pepper to taste
Preparation:
Prepare Parmesan Crisps.
Bring 6 cups of water to boil in a deep skillet, then turn the heat down so it is simmering. Add vinegar.
Break the eggs into a bowl, then slide them one at a time into the simmering water. Simmer eggs until the whites are firm, about 3 minutes. Use a slotted spoon to transfer the eggs to bowl.
Garnish each egg with 2 Parmesan crisps, grated Parmesan and herbs.
