This Comte Stuffing Recipe is a delicious vegetarian stuffing option. It's almost more like a savory bread pudding than a stuffing.

Comte isn't the only cheese that can used in this recipe. A mild Swiss cheese or Monterey Jack would be good, too. So would Gruyere or Cheddar.

Prep Time: 45 minutes

Cook Time: 35 minutes

Ingredients:

  • 1 loaf French bread
  • 2 cups non-fat milk
  • 1 Tbsp Olive Oil
  • 1 onion, chopped
  • 1 cup finely chopped celery
  • 1 Tbsp finely chopped fresh sage
  • 1 cup finely chopped Italian parsley
  • 8 oz crimini mushrooms, sliced in half
  • 1/2 lb. Comte cheese, grated
  • 1 tsp salt
  • 1 tsp black pepper

Preparation:

Cut loaf of bread into 1/2 inch slices, then cut the slices into thirds. Put bread pieces into a 9x13 pan and add milk. Mix so that all the bread becomes moist. Let sit for 30 minutes.

Preheat oven to 350

In olive oil saute onion, celery, sage, parsley and mushrooms until soft and slightly browned, 8-10 minutes.

With a large spoon, mush bread up into smaller pieces. Mix in sauteed vegetables and herbs. Add grated cheese, salt and pepper. Mix again.

Cover the pan with tinfoil. Bake 20 minutes. Take off foil and bake another 15 minutes.
