For the crust, follow a recipe, or buy pre-made pizza dough.
Serves 2-4
- Pizza Dough (see above)
- 1 cup roughly chopped Kalamata olives
- 1/2 lb. Teleme cheese
- 1 Tbsp. roughly chopped fresh oregano
- 1 Tbsp. roughly chopped fresh thyme
Preheat oven to 450.
Roll or stretch the pizza dough onto a pan or baking stone.
Take Teleme out of the refrigerator. Before it warms and becomes gooey, break off small pieces with your fingers. Drop the pieces of cheese evenly around the pizza dough.
Sprinkle the olives and herbs evenly over the cheese.
Bake the pizza for 15-25 minutes, until the crust is browned and the cheese is slightly browned and bubbly.
