Vegetarian Tacos with Cheese Filling Recipe

This recipe for vegetarian tacos is light and refreshing. Experiment with the types of vegetables you use depending on the season.

Vegetarian Tacos with Cheese Filling Recipe makes 4-6 small tacos

Prep Time: 30 minutes

Cook Time: 10 minutes

Ingredients:

  • 1 cup ricotta cheese or fresh goat cheese
  • 1 four ounce can diced mild green chiles
  • 2 Tbsp roughly chopped cilantro
  • 2 zucchini, grated
  • 2 cups corn
  • 1 tomato, finely chopped

Preparation:

In a food processor, combine cheese, chiles and 1 Tbsp cilantro. Salt and pepper to taste. Set aside.

In olive oil, saute zucchini until slightly browned. Add corn, and saute until corn is warmed, about 3-5 minutes. Take off the heat. Add 1 Tbsp cilantro and tomato. Salt and pepper to taste.

Spoon vegetables into small warmed corn or flour tortillas. Top with a generous spoonful of cheese and garnishes such as avocado (or guacamole), fresh cilantro and salsa.
