Feta

Type of Milk:
Feta is traditionally made with sheep’s milk, although many stores also sell goat and cow’s milk feta as well.
Origin:
Feta is a staple in many eastern European countries and a cheese that many people associate with Greece.
Flavor:
The texture can be extremely creamy, or dry enough to crumble. The flavor is fresh, tangy, slightly herbal, sometimes “sheepy” and always salty. The brine feta is packed in gives it the salty flavor. You can rinse feta under water to eliminate some of the saltiness if needed.
Uses and Pairings:
Feta is delicious alone with a baguette, or drizzled with olive oil and garnished with either herbs, roasted red peppers, olives, or nuts. It adds flavor to salads and pizza and is used in many Greek dishes such as spanakopita. The salty flavor of Feta pairs well with beer.
