Gruyere Mashed Potatoes

The Gruyere cheese in this recipe does not make theses potatoes super "cheesy" - it just adds delicious, rich flavor. You can add more cheese by sprinkling grated Gruyere on top of the potatoes as a garnish right before serving.

Recipe for Gruyere Mashed Potatoes makes four servings

Prep Time: 15 minutes

Cook Time: 25 minutes

Ingredients:

  • 3 lbs baby red potatoes
  • 2 cups grated Gruyere cheese, (about 1/2 lb. of cheese)
  • 1/3 cup milk
  • 1/4 tsp salt, or more to taste
  • 2 Tbsp roughly chopped parsley

Preparation:

Without removing skins, cut potatoes in half. Boil until soft enough to easily pierce with a fork, about 25 minutes.

Warm 1/3 cup milk in a pan or in the microwave- do not let boil.

Drain water from potatoes and put in a mixing boil. Add warm milk and salt. With an electric mixer beat potatoes until just mashed, about 20 seconds. Add cheese. Beat again until potatoes are smooth.

Garnish with roughly chopped parsley
