Chicken, Rice and Monterey Jack Cheese Casserole

When I want comfort food, I crave this Rice, Chicken and Monterey Jack Casserole based on one my Mom used to make. Cream of Mushroom soup is the irreplaceable ingredient that gives flavor and binds everything together.

Monterey Jack Cheese is so mild and creamy that I think it's the best cheese for this recipe. For added spiciness, try using Pepper Jack Cheese.

Rice, Chicken and Monterey Jack Casserole Recipe serves 2

Prep Time: 25 minutes
Cook Time: 1 hour, 45 minutes
Ingredients:
  • 3/4 cup long grain white rice
  • 3/4 lb. chicken breast (about 1 1/2 breasts)
  • 2 cups broccoli florets
  • 1 cup grated Monterey Jack cheese
  • 1 can Cream of Mushroom Soup
  • 1 1/2 cup water
  • 1/2 tsp. tabasco sauce
Preparation:

Preheat oven to 350.

Cut chicken into 1/2 inch wide strips. Cut the strips into small chunks. Mix the chicken, rice, broccoli and cheese in a 8x8 baking pan.

In a separate bowl, whisk the can of Cream of Mushroom soup with water and tabasco sauce. Pour over ingredients in the pan.

Cover with tinfoil. Bake for 1 hour and 45 minutes. Take out of oven and let sit 10 minutes befor eating.
