Whether you love 'em or hate 'em, this Cheesy Brussels Sprouts recipe is worth trying. Shredding the brussels sprouts changes the texture entirely and the sometimes heavy vegetable becomes light and feathery. Adding cheese to brussels sprouts gives some richness and flavor - if you add enough, it will disguise the flavor of brussels sprouts entirely.

Many different types of cheese will work when making brussels sprouts and cheese. Try Parmigiano-Reggiano, Pecorino Romano, Fontina, Monterey Jack or Gruyere.

Cheesy Brussels Sprouts recipe makes 2-4 servings

Prep Time: 15 minutes

Cook Time: 25 minutes

Total Time: 40 minutes


  • 1 pound brussels sprouts
  • 1/4 cup olive oil
  • 1/4 - 1/2 cup grated cheese
  • salt and pepper to taste


Preheat oven to 350.

In a food processor, grate brussels sprouts. Toss with olive oil and spread evenly in a baking pan. Bake for 25 minutes, or until soft. Stir occasionally to prevent burning. Remove from oven and stir in cheese. If needed, return pan to the oven for a few minutes to melt the cheese. Add salt and pepper to taste.
