Ingredients:
- 2 Romaine lettuce hearts
- 2-3 tomatoes
- 1 can hearts of palm
- 1 cucumber
- 1/2 cup crumbled feta
- Dressing:
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 1/2 teaspoon lemon zest
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Preparation:
Cut romaine hearts in half, then in fourths and chop the lettuce into small pieces. Dice tomatoes, hearts of palm and cucumber into small pieces. Mix together in a large bowl with the feta.
In a small bowl whisk together oil, lemon, lemon zest, salt and pepper. Drizzle over the salad. Serve immediately so the lettuce does not get soggy.
