Feta with Spicy Broccoli Recipe

I have always found that broccoli tastes better when covered with a little bit of cheese. Using Feta keeps the dish light, but adds a creamy richness to offset the spicy flavor. I prefer using broccolini or broccoli rabe for this dish, but regular broccoli is good too.

Spicy Broccoli With Feta Recipe serves four

Prep Time: 5 minutes
Cook Time: 10 minutes
Ingredients:
  • 16 oz Broccoli
  • 1/3 lb Feta, crumbled
  • 2 tsp. olive oil
  • 1/4 tsp red pepper flakes (or more, if you like spicier food)
Preparation:
Heat olive oil in a saucepan over high heat. When the olive oil begins to sizzle slightly, add the broccoli. Saute 5-6 minutes, turning the heat down to medium, until broccoli begins to soften and brown around the edges. If the broccoli pieces are still firmer than you want, add 2 tsp water to the pan and with a lid on cook 1 minute more.

Add red pepper flakes. Transfer broccoli to a plate and cover with crumbled Feta.
