Best Cheeses:

  • Traditional Curado - Raw goat milk, aged 2 to 4 months. A pliable texture with sweet, nutty, and grassy flavors
  • Quillisascut Viejo - Same as the Curado, but aged more than four months for a harder texture and more savory flavor
  • Smoked Curado - Same as the Curado, with a smoky paprika-like spiciness and meaty flavor
  • UFO - Soft texture, herbal, earthy flavor and tangy bite

      Cheesemakers:

      Since 1987, Lora Lea and Rick Misterly have been making raw goat cheese with milk from their small herd of goats at Quillisascut Cheese Company. Their farm in Northeastern Washington State is not just a cheesemaking operation. The Misterlys also run a farm school to promote eating locally and offer classes to introduce culinary professionals and others to sustainable farming.
