- Ricotta - Made from sheep or cow milk. Sweet, milky and fluffy
- Pepato - Semi-soft raw sheeps' milk made with vegetarian rennet and dotted with whole black peppercorns
- San Andreas - Raw sheeps' milk made with vegetarian rennet. Creamy, mild and tangy.
- Carmody - Raw cows' milk available young and aged (4 months). Sweet and sharp flavors that strengthen with age.
Cheesemakers:
Bellwether Farms is a farmstead operation with sheep and cows that provide milk for their handmade cheeses. In 1986 Cindy Callahan began making cheese in her fifties after a nursing career. Her son, Liam, now makes all the cheeses made on their farm. Their cheeses can be found in restaurants and cheese stores around the country.
