- Cheddar - white Cheddar, made with raw milk and also available flavored (chipotle and sage)
- Silver Mountain - cheddar-like in flavor, and described by the cheesemakers as a "Manchego-Cantal cross". Made with raw milk. Grassy, nutty and mild with a grainy texture.

In 1979,
Bravo Farms was a family-run dairy. After several years, Bill and Pat Boersma started using the milk from their Jersey cows to make cheese as well. Over the years they developed and perfected their own recipe for Cheddar. In recent years they have partnered with Jonathan Van Ryn, who studied cheesemaking at California Polytechnic University, to make their cheeses.
